Quinoa and White Bean Veggie Burger - from The Simple Veganista

This veggie burger is awesome.  Not dry, not crumbly, not boring....just really, really good.  Doesn't the picture say it all?  I made that! Yay, me! I often hear, "I don't have time", or "I don't know how".  One of my wise coaches once said, "instead of saying 'I don't have time', say 'it's not a priority' and see how that feels".  (Looking at you Eric).  Eating healthy is a priority we can and need to get behind!

This burger is full of fiber and protein from the quinoa and beans.  It has fresh veggies in it (feel free to add other veggies too).  It has tons of flavor from the spices!  If you're gluten free, get a gluten free bun or slap that patty on top of a bed of greens and you've got a killer salad. Where's the beef?  Who cares if you've got this for dinner.
